This Quick & Easy Vegan Salsa is great in salads and served as a side with my Speedy Vegan Sharing Nachos.
It’s also great very lightly sautéed to top pasta salads, even with the cucumber in it! But add the coriander after the sautéing so it does not lose its flavour.

Variations – add any of the following depending on your tastes and what you are serving it with.
Freshly ground salt
Freshly ground black pepper
Finely chopped chilli peppers – jalapeños work well but I also use hotter varieties of chillies, depending on who I am sharing it with!
Finely chopped gherkins
Finely chopped red onion
Finely sliced spring onions
Finely chopped herbs of your choice
Red or Green bell peppers
Finely sliced celery
Finely diced carrots
Finely diced courgette
Mayonnaise – works well in sandwiches
Salad cream – works well in sandwiches
The options are endless.

Quick & Easy Vegan Salsa - How do you like yours?

- 30 Cals/Serving
- ½ medium onion, finely chopped
- ⅓ cucumber, finely diced
- 1 ripe tomato, finely diced
- ⅓ yellow bell pepper, finely diced
- Handful coriander leaves, finely chopped
- Step 1
- Mixed all the ingredients together for a basic salsa.
- Step 2
- Add any extras, if you want to, and serve.
